Ingredients

4 potatoes (diced)

1 cauliflower (washed in warm water and cut into small florets)

3-4 carrots (diced)

1 cup green peas

3-4 large tomatoes (cut into large pieces)

2-3 large onions (cut into large pieces)

3 tbsp ginger (large piece)

10-12 garlic cloves (peeled)

12-15 green cayenne pepper (halved)

5 tbsp oil

4 spring onions (diced)

1 green bell pepper (diced)

3 tbsp red cayenne pepper powder

3 tbsp coriander powder

1 tsp turmeric powder

3 tbsp special spice mix (pav bhaji masala)

3 tbsp salt

2-3 tbsp lemon juice

Water as required

Fresh cilantro / coriander (to garnish) (optional)

2 bun bread packs (12 each)

1 stick butter (¼ lb / 100 grams)

Method

First of all boil the potatoes, cauliflower, carrots, peas (if fresh) with little water in a pressure cooker. Let this cool down and set the vegetables aside. Additionally puree the tomatoes, onions, ginger, garlic and green cayenne pepper in a food processor.

Take a cooking pot and heat the oil into it. Now saute the spring onions, green bell pepper and green peas (if frozen) for ~2 minutes. Add the tomato onion puree and stir. Also add the red cayenne pepper, coriander and turmeric powder; special spice mix and salt to taste. Stir this and close the lid of the pot to let the puree cook until the oil separates, stir in between. Add the boiled veggies and stir. Once again cover the lid of the pot and allow the veggies to cook for ~10-15 minutes, stir occasionally. Mumbai Vegetable Mix (pav bhaji) is ready to be served with Bun Bread. In addition garnish this with butter (optional), lemon juice, diced onions and fresh cilantro!

Bun Bread: To prepare the bun bread, apply ghee or butter on each of the sides of the bread. Now bake the bread on each side on a medium hot flat griddle (tava) until crisp. Serve the hot crisp bread with Mumbai Vegetable Mix and enjoy!
