Ingredients

3 cups wheat flour (~7-8 flatbreads)

¼ tsp salt

¼ cup yogurt / curd

1¼ cup water

Butter / ghee (Indian butter)

Method

To make Indian flatbread first of all take the flour, salt, yogurt and water in a pot and mix the ingredients well to make the dough. Also add water as required to make soft dough. Now let the dough rest for ~10-15 minutes. Finally roll the dough in ¼ tsp of butter / ghee for smooth texture of the dough and even flatbread.

To bake the flatbread, take the dough and make small equal size balls of the dough. Further roll each of the balls into dry flour to make nice and round flatbread. You can once again apply the dry flour to the part rolled flatbread and complete the rolling of the flatbread to make sure the flatbread would not stick on the chapati board. Now take a flat pan (tava) and heat this on medium to high heat. Carefully place the rolled flatbread onto the heated pan and allow this to cook on a side. Once baked or brightened on one side turn the bread to the other side. Once the flatbread is cooked on the other side, flip the flatbread once again to the first side and with help of a piece of cloth slowly press the flatbread to puff it up. Take care when the flatbread puffs as it may release warm air in the process. Finally apply butter / ghee on the cooked flatbread. Repeat the process and make all the Indian flatbread (roti / chapati).

Suggested Food Pairing: Use this as a part of main course with your choice of vegetable, curry, lentil or pulses (dal).
