SPINACH TOMATO CURRY (PALAK TAMATAR)

Ingredients

1 bunch spinach leaves (diced)

1 tbsp oil

¼ tsp cumin seeds

1 tsp red cayenne pepper powder

1 tsp cilantro / coriander powder

¼ tsp turmeric powder

¾ tsp salt

1 large tomato (diced)

1¼ tsp wheat flour

Method

Take a cooking pot and heat the oil into this. Add cumin seeds and heat this until it sizzles. Now saute part of the spinach leaves in the pot and cover the lid until the leaves reduces in volume. Stir and repeat the process until all the spinach leaves is tender. Add red cayenne pepper powder, cilantro / coriander powder, turmeric powder and salt to taste. Close the lid of the pot and cook for ~5-6 minutes. Additionally saute tomatoes and close the lid of the pot to cook for another 2-3 minutes. Also sprinkle the wheat flour into the spinach tomato curry and stir well to avoid any lumps. Once again close the pot and allow this to cook for ~8-10 minutes or until the water in the curry thickens a little. Serve hot the Spinach Tomato Curry!
