Ingredients
5-6 eddoe / arvi (boiled, peeled and cut into medium pieces)
½ cup yogurt / curd
1½ tsp red cayenne pepper powder
1½ tsp cilantro / coriander powder
¼ tsp turmeric powder
1½ tbsp oil
¼ tsp mustard seeds (sarson)
3-4 green cayenne pepper (diced)
1½ tsp salt
1 cup water
Fresh cilantro / coriander (to garnish) (optional)
Method
To make Indian eddoe yogurt curry first of all mix yogurt, red cayenne pepper, coriander powder and turmeric powder in a bowl and set aside. Take a cooking pot and heat the oil into this. Now add the mustard seeds and heat this until it sizzles. Add green cayenne pepper and stir. Further add the yogurt and keep stirring until this comes to boil. Once the yogurt boils for a while add the eddoe / arvi, salt to taste and water to this. Finally cook this for ~10-12 minutes or until thick gravy. Garnish the Indian eddoe yogurt curry with fresh cilantro and serve hot.

Tips:
- Eddoe / Arvi can be boiled with water in microwave for ~10-12 minutes or in a cooking pot / pressure cooker on the stove-top.
