1¼ cup flattened rice
1½ tbsp oil
¼ tsp black mustard seeds (sarson)
2 tsp curry leaves (optional)
2-3 green cayenne pepper (diced) (optional)
1 small onion (diced)
¼ tsp turmeric
½ tsp salt
Fresh cilantro / coriander (to garnish) (optional)
Take the flattened rice in a sieve and rinse through water. The flattened rice should be moist before cooking this, if this becomes too dry moisten once again before cooking.
Heat the oil in a pan / pot. Add the mustard seeds and heat this till it sizzles. Now stir the curry leaves and green cayenne pepper. Further saute the onions until golden brown. Add the turmeric powder, salt to taste and stir. Add the moistened flattened rice and mix well. Finally stir and cook this for ~3-5 minutes. Garnish the flattened rice snack with fresh diced cilantro.

- Stir shredded ginger along with the green cayenne pepper above. Also you may add 1 tsp of lemon juice when you garnish the flattened rice snack with cilantro to enhance the flavor.
- To make flattened rice snack (pulav / pilaf) saute diced carrot and peas for 5 minutes with additional spices as red cayenne pepper and coriander powder after the onion is golden brown as above. Alternatively saute diced potatoes until tender after the onion is golden brown to make potato flattened rice snack!
- Saute roasted peanuts after the mustard seeds sizzle for nutty flavor and add fresh pomegranate or dried cranberries with cilantro garnish for fruity flavor!
