Ingredients

1 lb (450 grams) fresh asparagus (cut into long pieces, discard any woody ends)

2 cups vegetable stock or water

4 tbsp plain yogurt / curd

1 tsp salt

Method

Take the asparagus, the stock or water in a cooking pot and cover the pot with lid. Now boil the asparagus on medium heat for ~10-15 minutes or until it is tender and let the asparagus cool. Puree the cooled asparagus, water, yogurt and salt to taste in a blender. Additionally check the consistency of the soup and add water as required. Serve the Creamy Asparagus Soup cold or chilled.
