SPROUT GRAINS SAUTE (ANKURIT MUNG CHANA)Know this – sprouts are more nutritious then the original beans and require much less cooking time! Enjoy this quick Sprout Grains Saute (ankurit mung chana) recipe from VegRasoi.com.

Serves: 2-3 Cooking Time: ~25 minutes



2 cups sprouted green gram (mung beans) and / or chickpeas (chana)

¼ cup water

1¼ tbsp oil

1 large onion (diced)

1 large tomato (diced)

3-4 garlic cloves (minced)

1 tsp red cayenne pepper powder

1 tsp cilantro / coriander powder

1½ tsp salt


Place sprouted grains with water in a microwave bowl. Microwave it for ~4-5 minutes until tender.

Heat the oil in a pan and sauté the onion until golden brown. Add tomatoes, garlic, red cayenne pepper powder, cilantro powder and salt to taste. Allow this to cook for ~5-6 minutes so as to make good sauce. Further add the tendered grains and cook until oil separates or there is no water left. The Sprout Grains Saute is ready to eat!

  1. Alternatively you can make Sprout Grains Saute using only the spices – cumin seeds, red cayenne pepper powder, turmeric powder (¼ tsp), cilantro / coriander powder and salt to taste. For this, heat oil in a pan. Add cumin seeds and heat this until it sizzles. Soak all the spices – red cayenne pepper powder, turmeric powder, cilantro / coriander powder and salt in ¼ cup water. Allow the spices to stand ~5 minutes to make a paste as the spices soak the water. Add the spices paste to the heated oil and cumin seeds. Let the spices cook in a closed pan for ~5 minutes or until oil separates. Now add sprouted grains and sauté for ~2-3 minutes. To this add ½ cup water and close the lid. Let the grains cook for ~10-12 minutes or until they are tender and the oil separates or there is no water left. Your Sprout Grains Saute is ready!
  2. You can also steam boil the sprouted grains for the Sprout Grains Saute. Take the grains in a bowl with a lid that can go inside pressure cooker, with water on the side of the bowl. Add little more water in the pressure cooker than as used to boil the grains in microwave above. Now close the pressure cooker and place it on the oven top on medium heat. The steamed grains would be ready in one whistle from the cooker! Let the pressure be released of the cooker before you open it. After you open the pressure cooker allow the grains to cool.
