Serves: 2 Cooking Time: ~45 minutes

 

Ingredients

1 cup sprouted green grams (mung beans) and / or chickpeas (chana)

½ cup yogurt / curd

1¼ tsp red cayenne pepper powder

1¼ tsp coriander powder

¼ tsp turmeric powder

1¼ tbsp oil

¼ tsp mustard seeds (sarson)

1-2 green cayenne pepper (diced) (optional)

1½ tsp salt

1 cup water

Fresh cilantro / coriander leaves (to garnish) (optional)

Method

First of all boil the sprouted grains with ¼ cup water in microwave for ~4-5 minutes until tender.

Further mix yogurt, red cayenne pepper, coriander and turmeric powder in a bowl and set aside. Now take a cooking pot and heat oil into it. Add mustard seeds and heat this until it sizzles. Add the green cayenne pepper and stir. Also add the yogurt spice mix and water, continue to stir until this comes to boil. Once the yogurt boils up well, add the tender sprouts, salt to taste and water as required for thick gravy. Allow this to cook for ~8-10 minutes or until thick gravy. Garnish this with fresh cilantro leaves and serve hot sprout grains curry.

Suggested Food Pairing: Use this as a part of main course with your choice of bread.

Tips:

  1. You can make red grams (red mung beans) or green grams (green mung beans) sprouts curry alone or have your own combinations of sprouted grains for the Sprout Grains Curry.
  2. Stir the yogurt well while it cooks and comes to boil, to make sure the yogurt remains good!
  3. You can also steam boil the sprouted grains for the Sprout Grains Curry. For this take the grains in a bowl with a lid, that can go inside pressure cooker, with water on the side of the bowl. Add little more water in the pressure cooker than as used to boil the grains in microwave above. Now close the pressure cooker and place it on the oven top on medium heat. The steamed grains would be ready in one whistle from the cooker! Let the pressure be released of the cooker before you open it. After you open the pressure cooker allow the grains to cool.
